Asafoetida, a remarkable perennial herb, boasts an aromatic resin, a bold culinary heritage, and centuries of traditional use. People refer to Ferula assa-foetida (syn. Ferula foetida, Narthex assa-foetida) as Hing, Devil’s Dung, Food of the Gods, Stinking Gum, and Asafoetida. Originating from the high plains of Iran and Afghanistan, this striking plant grows into an impressive specimen, with flower stalks that tower around 2 metres and create an eye-catching addition to herb and collector gardens.
For thousands of years, people across cultures have valued Asafoetida. Ancient Greek and Roman civilisations used the resin as a prized spice, and many Indian and Central Asian cuisines still rely on it as an essential ingredient today. Harvesters collect the fragrant gum resin from the mature taproot, which dramatically transforms during cooking and develops a rich savoury flavour despite its famously pungent aroma when raw. Cooks can also use young stalks and leaves, as their strong scent disappears once cooked.
Asafoetida grows as an herbaceous perennial that thrives in full sun and well-drained soil.
