Vanilla Plant

Vanilla Plant brings one of the world’s most treasured flavours into the garden, in the form of a remarkable tropical orchid with an ancient story.

Officially named Vanilla planifolia Andrews, this evergreen perennial develops into a fleshy climbing vine that uses aerial roots to cling to trees, trellises, or other sturdy supports. Under ideal tropical conditions, mature vines may reach approximately 15 metres. As the vine grows, it produces clusters of elegant yellow-green orchid flowers, and each bloom opens for only a brief period.

Common names include Vanilla, Vanilla Plant, Vanilla Orchid, Vanilla Bean Orchid, Flat-leaved Vanilla, Flat-leaved Vanilla Orchid, Commercial Vanilla, Bourbon Vanilla, Madagascar Vanilla, Mexican Vanilla and West Indian Vanilla. The latter names are also used for vanilla associated with particular regions or the international spice trade.

Native to southern Mexico, Central America, and northern South America, vanilla has captivated people in Mexico for centuries. The famous fragrance arises not from the flower but from its elongated fruit. After successful pollination, the pods mature over many months. Growers then harvest and carefully cure them to develop their deep, sweet aroma.

Cooks use prepared vanilla pods to flavour ice cream, cakes, custards, chocolate and beverages. Perfumers also prize their complex fragrance, while dried pods make an exquisite addition to potpourri. Growing this vine offers plant collectors the unusual experience of cultivating an edible crop that an orchid produces. Outside its native habitat, most gardeners must hand-pollinate the flowers to produce pods.

Choose a warm, humid and protected position with bright, filtered light or gentle early-morning sun. Provide rich, well-composted but free-draining growing media, regular moisture without waterlogging, and a strong climbing support.

This frost-tender orchid thrives in subtropical and tropical conditions. Many coastal gardeners in Australia can grow it outdoors, but gardeners in southern and inland areas will generally need a heated greenhouse or additional winter protection.

Its preferred climate is comparable to our Pandan Plant, making the pair distinctive companions in a protected tropical edible garden. A Cocoa Plant is another fitting choice, recalling vanilla’s long history as a prized flavouring for cacao drinks.
