Discover Anise Hyssop Seeds

Agastache foeniculum belongs to the mint family and is native to central North America. Common names include anise hyssop, anise mint, blue giant hyssop, lavender giant hyssop, liquorice mint and licorice mint.

Its aromatic foliage resembles Korean Mint but offers a distinctive, strong aniseed scent. Upright flower spikes rise above leafy clumps, combining ornamental appeal with practical uses. Expect plants to reach approximately 1 metre tall and 60 centimetres wide, depending on conditions.

Fresh Flavour for Teas and Cooking

Steep fresh or dried leaves for a fragrant herbal tea with a naturally sweet, liquorice-like flavour. Add small amounts to salads, soups, fruit dishes and refreshing fruit cups. The edible flowers also make colourful garnishes.

Harvest leaves as needed, preferably before flowering, for best flavour; dry spare foliage for later tea blends or fragrant potpourri. Start with a little when cooking, as the aniseed character can quickly dominate delicate flavours.

Pair your harvest with leaves from our Lemon Balm Plant for a bright, citrus-and-anise tea blend. Our German Chamomile Seeds offer another rewarding addition to a homegrown tea garden.

Growing Anise Hyssop Seeds

Choose an open, sunny spot with well-drained soil. Surface-sow onto fine seed-raising mix, gently press down and keep evenly moist during germination. Light helps the seeds germinate, so avoid burying them deeply.

Transplant sturdy seedlings after the risk of severe frost passes, leaving room for mature clumps. Established plants tolerate frost and some drought, although occasional watering supports growth during prolonged dry weather.

This herbaceous perennial usually dies back in autumn or winter and returns with fresh spring growth. Leave some flowers for pollinators, or trim spent spikes to encourage further blooms.
